The Limone Costa d'Amalfi IGP, known as "Sfusato Amalfitano", is a citrus fruit with an elongated shape and medium-thick skin, rich in essential oils with an intense and unmistakable fragrance. Cultivated on the famous terraces overlooking the sea of the Costiera Amalfitana, this lemon has been a protagonist of local gastronomic tradition for centuries.
Cultivation takes place between 50 and 600 meters above sea level, under the characteristic "pagliarelle" — structures made of chestnut poles and mats that protect the fruits from winter cold. This technique, passed down from generation to generation, gives the lemon a unique flavor: sweet, low in acidity, with floral notes.
From the Sfusato Amalfitano comes the celebrated Limoncello, but its culinary uses are endless: from Delizia al Limone to risottos, from salads to fish dishes. Harvesting takes place by hand from February to October.
