Miele del Carso

Miele del Carso is a typical product of Friuli-Venezia Giulia, characterized by its origin in the spontaneous blooms of the Karst plateau. This region, with its distinctive limestone ecosystem and temperate continental climate, imparts distinctive organoleptic properties to the honey. The main sources of nectar are the marasca, a wild cherry with intense aromatic properties, and sumac, a shrub that grows naturally on the Karst rocks.

On the palate, Miele del Carso presents complex floral notes and a slightly bitter aftertaste, a legacy of the local flora. The consistency is dense and natural crystallization occurs gradually over time. In the glass it displays amber hues with golden reflections, a result of the heterogeneous botanical composition typical of wild flora honeys.

In the kitchen it is used both in traditional pastry-making and as a finishing element for cheeses and savory dishes, where its aromatic complexity enhances robust flavors. It is also appreciated for direct consumption, as it represents an authentic expression of the Friuli Karst territory.
