Carciofo di Paestum IGP is a round, compact and tender vegetable, completely spineless, cultivated in the Piana del Sele plains, at the gates of the famous Greek temples of Paestum. The "Tondo di Paestum" variety is distinguished by its subspheric shape, outer bracts in green with violet hues and a particularly fleshy and flavorful heart.
Harvesting takes place from February to May, entirely by hand. The artichokes are cut with a stem at least 10 cm long and immediately cooled to maintain freshness and crispness.
In the kitchen it is extremely versatile: raw in salads, grilled, fried, stuffed or preserved in oil. It is the star of numerous local food festivals that celebrate this excellent product every spring.
