Olio della Sabina DOP is an extra virgin olive oil produced in Sabina, the hilly region northeast of Rome. It is one of Italy's oldest olive oil PDOs: Sabina is the region that gave its name to the "Sabina" olive variety, and here the olive groves boast 2,000 years of documented history.
Produced mainly from Carboncella, Leccino, Raja, and Frantoio cultivars, it displays a golden yellow color with green hints. It offers a medium fruity flavor, sweet with notes of almond and artichoke, with a light bitter and peppery finish.
This was the oil used to fuel the lamps of the Temple of Vesta and for anointing Roman athletes. Today it is perfect for bruschetta, soups, salads, and fish dishes.
