Pecorino sabino

Pecorino Sabino is a hard-paste cheese produced from whole sheep's milk, following the pastoral traditions of Rieti province. It is born in the pastures of the Apennine Mountains in Lazio, where flocks graze on local flora, giving the milk distinctive organoleptic characteristics. The production area, Sabino, represents one of the historical regions of Italian transhumance.

The cheese features a natural rind with a yellow-brown color, sometimes with darker hues due to aging. The paste is compact and slightly grainy, with an intense straw-yellow color. The flavor is characteristic: initially sweet, it evolves toward more pronounced notes and a pleasantly spicy quality as it ages, accompanied by a pleasant aromaticity.

In the kitchen, Pecorino Sabino lends itself both to table consumption and to grating over traditional dishes. It pairs particularly well with full-bodied red wines and represents an important element of Lazio's table, where it is often enjoyed alongside homemade bread and fruit preserves.
