Stracciata molisana is a fresh stretched-curd cheese typical of the Molise region, where it represents one of the most characteristic expressions of local cheesemaking tradition. Made with cow's milk, this cheese distinguishes itself from mozzarella through greater flavor complexity and a slightly more compact structure, while maintaining that characteristic elastic consistency typical of stretched-curd cheeses.

Production follows the traditional stretched-curd method: milk is coagulated with the addition of rennet, the curds are broken and heated, then stretched and shaped into characteristic forms. The result is a white or slightly ivory-colored cheese, with a smooth surface, featuring a delicate yet well-defined aroma and a more pronounced, savory taste compared to its better-known variants.
