Tegole Valdostane are thin and crispy cookies shaped like curved roof tiles, made with almonds and hazelnuts. The name comes from their resemblance to the slate tiles that cover the roofs of Valle d'Aosta.

Perfect with coffee or a glass of Moscato.

Preparation

  1. 1

Lightly whip the egg whites with sugar.

  2. 2

Fold in the almonds, hazelnuts, flour, and melted butter.

  3. 3

    Add the vanilla extract.

  4. 4

Place small portions on a baking sheet lined with parchment paper.

  5. 5

Bake at 180°C for 8-10 minutes.

  6. 6

As soon as they come out of the oven, place them on a rolling pin to create the curved shape.

Chef's Tips

The tegole must be curved while still hot from the oven: they cool in just a few seconds. Work quickly.
