Robiola di Roccaverano

Robiola di Roccaverano is a soft-paste goat cheese originating from the Langhe region in the province of Asti, Piedmont. Recognized as a Protected Designation of Origin (DOP), it represents one of Italy's finest cheese products, celebrated for its ancient tradition and distinctive organoleptic characteristics. Its production follows time-honored methods using whole goat milk without any added preservatives, giving the finished product that particular delicacy which sets it apart.

In appearance, it presents a creamy and homogeneous paste, with a white or straw-yellow color depending on the aging process. The soft and spreadable consistency makes it instantly recognizable on the palate, while the flavor is sweet and slightly tannic, with aromatic notes that evoke the pastures of its native region. The thin natural rind may display slight blue hues from noble molds that develop naturally during aging.

In the kitchen, Robiola di Roccaverano is remarkably versatile: it is delicious enjoyed on its own, perhaps accompanied by honey or fresh fruit, pairs wonderfully with toasted bread, and rightfully features in creative culinary preparations. Its soft paste makes it particularly suitable as a base for more elaborate dishes, while maintaining its organoleptic properties intact.
