Seadas (or Sebadas) are the most beloved Sardinian sweet: large fried ravioli made with semolina pasta filled with fresh, tangy cheese (young pecorino or casu axedu), served hot and drizzled with corbezzol or chestnut honey.
Their origin is pastoral: shepherds from Barbagia created this dish using available ingredients — semolina, cheese, and honey from their own hives. The pasta must be thin and crispy, while the cheese inside should be creamy and stretchy.
The contrast between the crispiness of the fried pasta, the creaminess of the melted cheese, and the bittersweet flavor of corbezzol honey creates a unique sensory experience. They are served piping hot as a dessert or afternoon treat.
