Manna delle Madonie

Manna delle Madonie is an extraordinary natural sweetener, obtained from the sap of the manna ash, a tree species that grows spontaneously in the mountains of the Madonie in Sicily. Harvesting takes place entirely by hand during the summer period: the trees are incised using traditional techniques and the sap that flows out is collected drop by drop, then left to solidify in the open air. The result is a substance with an amber color, crystalline consistency, and a delicately sweet flavor with slightly aromatic notes, completely different from any other sugar or honey.

This product represents a millennia-old tradition of inland Sicily, where the manna ash is a characteristic element of the rural landscape. Manna boasts naturally laxative properties and has been used for centuries in cooking and folk medicine. In the kitchen it is used as a sweetener for beverages and desserts, or as an ingredient in both sweet and savory dishes, where it imparts a sophisticated sweetness without acidity.

Its recognition as a Slow Food Presidium testifies to the importance of preserving this manual harvesting practice and the agricultural heritage of the Madonie, where the production method remains linked to ancient knowledge and respect for the plant›s natural cycles.
