Pecorino Toscano

Pecorino Toscano DOP is a soft or semi-hard cheese made from sheep's milk throughout the Tuscany region. It comes in two versions: "Tenero" (fresh, aged for a minimum of 20 days, with a light yellow rind and a sweet flavor) and "Stagionato" (aged for at least 4 months, with a dark rind and an intense flavor).

Its origins are ancient: the Etruscans and Romans already appreciated Pecorino Toscano. Lorenzo the Magnificent cited it as "the finest cheese one could find". The production area spans from Val d'Orcia to Maremma, from Garfagnana to Chianti.

Aged Pecorino Toscano pairs perfectly with pears, chestnut honey, and Vin Santo. Fresh cheese is best enjoyed in salads with fresh fava beans.
