Manzo all'Olio di Rovato

Manzo all'Olio is a braised beef dish from Franciacorta: the beef cooks slowly in Garda oil with anchovies, garlic, and parsley. Incredibly tender meat with a creamy sauce.

A traditional Brescian farmhouse dish, perfect served with polenta.

Preparation

    Cut the beef into thick slices, about 1.5 cm.

    Arrange them in a casserole dish in a single layer.

    Cover with oil until the meat is almost submerged.

    Add desalted anchovies, minced garlic, and parsley.

  5. 5

    Cook covered over very low heat for 3 hours without turning.

  6. 6

    Dust with Parmigiano and breadcrumbs at the end of cooking.

  7. 7

    Serve with soft polenta.

Chef's Tips

Never turn the meat during cooking. Garda oil is ideal for its delicate flavor. Even more delicious the day after.
