The Carciofo Violetto di Sant'Erasmo is a tender and delicate variety cultivated on the Venetian island of Sant'Erasmo, historically known as the orchard of Venice. Characterized by an intense violet color and modest size, it features a compact structure with soft, spineless leaves, making it easily enjoyable even when eaten raw. Its flesh is particularly tender and the flavor is sweetly herbaceous, distinguishing it from more robust artichoke varieties.

Cultivation on the lagoon island, with its rich soils and unique microclimate, imparts distinctive organoleptic characteristics to the artichoke. Harvesting occurs in the early stages of the bud's development, when tenderness is at its peak, allowing the plant's delicacy to be fully preserved. This quality makes it particularly prized for raw consumption, in salads, or simply dressed with olive oil and lemon.

In the kitchen, the Carciofo Violetto di Sant'Erasmo lends itself to simple preparations that enhance its natural flavor: from classic carciofi trifolati to steamed preparations, to gourmet uses in contemporary dishes.
