Monte Veronese is a cow's milk cheese with Protected Designation of Origin status, produced in the Lessinia area between Veneto and Trentino-Alto Adige. Made from whole or selected milk using traditional methods, it represents an authentic expression of alpine cheesemaking, where the characteristics of mountain pastures influence the product's organoleptic profile.
To the eye, it presents a compact paste of pale straw color, covered by a natural rind. When cut, it offers a crumbly and granular consistency, typical of long-aged cheeses. The flavor is bold and complex, with notes reminiscent of alpine herbs and a pleasant pungency that develops on the palate, particularly pronounced in the more aged versions.
