Pandoro is the quintessential Christmas sweet of Verona, instantly recognizable by its distinctive eight-pointed star shape. Invented in 1894 by Domenico Melegatti, this incredibly soft leavened cake represents a masterpiece of Venetian pastry-making: a rich dough of butter and eggs that delights with its delicate texture and unmistakable aroma. Generously dusted with powdered sugar, it is the undisputed star of Christmas tables.

Preparation

    Dissolve the brewer's yeast in a little warm water. Meanwhile, sift the flour and create a well in the center.

    Pour the dissolved yeast into the center of the flour and begin kneading, gradually adding the eggs one at a time.

    When the dough begins to take shape, incorporate the soft butter in small pieces, continuing to work until you obtain a homogeneous and elastic mixture.

    Add the granulated sugar, salt, and vanilla, continuing to knead vigorously for at least 10-15 minutes until the dough becomes smooth and shiny.

    Transfer the dough to a bowl, cover with a cloth, and let it rise in a warm place for about 3-4 hours, until the volume doubles.

    Pour the dough into a star-shaped mold that has been previously buttered and floured. Cover and let it rise for another 1-2 hours.

    Bake in a preheated oven at 180°C for about 45-50 minutes, until the surface is golden. The pandoro is ready when a toothpick inserted in the center comes out clean.

    Remove from the oven and let it cool completely before gently turning it out of the mold.

    Once completely cooled, dust generously with powdered sugar.

Chef's Tips

The success of pandoro depends on the quality of the ingredients and patience during the rising times. Use excellent quality butter and eggs at room temperature. If your oven tends to brown too quickly, cover the cake with a sheet of parchment paper during the final minutes of baking.
