Scrippelle 'Mbusse (drenched crêpes) are delicate crêpes sprinkled with pecorino cheese, rolled up and served in steaming chicken broth. They are the signature first course of L'Aquila's culinary tradition, served at Christmas and festive celebrations.

Preparation

    Beat eggs with flour, milk, parsley and nutmeg.

    Cook thin crêpes in a pan with a little butter.

    Sprinkle each crêpe with grated pecorino cheese and roll it up.

    Arrange 3 rolled crêpes in each shallow bowl.

    Pour the steaming chicken broth over them.

    Add extra pecorino and serve immediately.

Chef's Tips

The crêpes must be very thin. The broth should be boiling when poured. The pecorino should be generous.
