Preparation

Beat eggs with flour, milk, parsley and nutmeg.

Cook thin crêpes in a pan with a little butter.

Sprinkle each crêpe with grated pecorino cheese and roll it up.

Arrange 3 rolled crêpes in each shallow bowl.

Pour the steaming chicken broth over them.

The crêpes must be very thin. The broth should be boiling when poured. The pecorino should be generous.
