Brodetto di Pesce alla Vastese

Brodetto alla Vastese is the fish soup of Costa dei Trabocchi: the freshest Adriatic fish cooked with tomato, sweet peppers, and chili. Each trabocco (traditional wooden fishing platform) has its own version.
In Vasto, brodetto is prepared with at least 10 types of fish of the day.
Preparation

Sauté onion, garlic, and bell pepper in oil.

Add diced cuttlefish and cook for 10 minutes.

Add tomatoes and chili pepper. Cook for 10 minutes.

Add the fish in order of cooking time and the vinegar.

Cook for 10-15 minutes without stirring, only shaking the pot.

Serve on toasted bread with parsley.

Chef's Tips
The sweet bell pepper is the distinctive signature of Brodetto alla Vastese. Don't stir: shake the pot gently to avoid breaking the fish.
