Vallee d'Aoste Fromadzo DOP is a semi-hard cheese made from partially skimmed cow's milk, embodying the authentic cheesemaking tradition of Valle d'Aosta. The name "fromadzo" comes from the local patois and simply means "cheese," reflecting its everyday presence in the Alpine diet.
It can be enriched with caraway seeds or juniper berries, which impart distinctive aromas. Aging ranges from 60 days to over a year. When young, it is sweet and delicate; as it matures, it becomes piquant and crumbly.
It is the most widespread table cheese in Valle d'Aosta, perfect paired with polenta, potatoes, and rye bread.
