
Cuzzupa Calabrese
Cuzzupa is Calabria's Easter sweet: a ring of sweet dough decorated with whole hard-boiled eggs and covered in white sugar glaze.
Shapes vary from town to town: rings, braids, baskets, doves. On the Coast of Oranges, tradition calls for a boyfriend to gift his girlfriend a heart-shaped cuzzupa with an odd number of eggs.
Preparation

Knead flour, sugar, eggs, oil, milk, baking powder, orange zest, and anise.

Work until smooth and homogeneous. Rest for 1 hour.

Shape into rings or braids, embedding hard-boiled eggs with shell.

Secure eggs with dough strips crossed over them.

Bake at 180°C for 25-30 minutes until golden.

Make glaze with powdered sugar and lemon juice.

Decorate warm cuzzupe with glaze and let dry.
Chef's Tips
Eggs cook with the shell inside the cuzzupa. The glaze should be thick. Add colorful sprinkles on the wet glaze for the festive version.
