
Fileja con 'Nduja
Fileja is the handmade pasta of the Vibonese region, crafted by rolling it around a small broom twig. Dressed with 'nduja di Spilinga sauce, it becomes a first course with a spicy and enveloping flavor.
It is the iconic dish of the Costa degli Dei.
Preparation

Knead the semolina with water and salt for 10 minutes. Let rest for 30 minutes.

Take small pieces of dough and roll them around a wooden stick to create the spiral shape.

Slide off the stick and arrange on a floured tray.

Sauté the chopped onion in oil. Add the 'nduja and let it melt while stirring.

Add the crushed peeled tomatoes and cook for 15 minutes.

Cook the fileja in salted water for 5-6 minutes.

Dress with the sauce, sprinkle with pecorino, and serve.
