Pecorino Crotonese

Pecorino Crotonese DOP is a hard cheese made from whole sheep's milk, produced in the hinterland between Crotone and Catanzaro.

Aging ranges from a minimum of 2 months (fresh) to over 12 months (aged). With maturation it develops an intense, slightly piquant flavor with notes of wild herbs from the Sila pastures.

Traditionally made by transhumant shepherds, Pecorino Crotonese is used grated over pasta and soups, or cut into shavings with honey and walnuts.
