Pecorino del Monte Poro

Pecorino del Monte Poro is a protected designation of origin cheese produced on the homonymous Calabrian plateau, one of the region's most renowned areas for sheep farming. Made from whole sheep's milk, this cheese follows traditional cheesemaking methods that guarantee distinctive organoleptic characteristics and consistent quality.

The paste presents a compact consistency and a color that ranges from white to straw yellow, while the flavor is characterized by slightly salty notes and a delicate aroma typical of its territory of origin. As it ages, the cheese develops greater flavor complexity and a more crumbly texture. The thin, regular natural rind reflects the traditional surface-ripening method.

In the kitchen, Pecorino del Monte Poro works equally well as a table cheese, ideal for cheese and cured meat boards, and as an ingredient in regional dishes. Its versatility makes it appreciated both in simple pairings with Tuscan bread or fruit, and in more elaborate preparations of Calabrese cuisine.
