Salama da sugo

Salama da sugo is a traditional cured meat from the province of Ferrara, recognized as a Protected Geographical Indication. It is a sausage prepared with selected pork, seasoned with dry red wine and a delicate mix of spices such as pepper, cinnamon and nutmeg. The mixture is stuffed into natural casings and undergoes an aging process that gives the product its characteristic compact consistency and intense red color.

From a sensory perspective, Salama da sugo presents a penetrating and spiced aroma, with a complex flavor and slightly sweet taste due to the presence of wine. The texture is soft yet well-structured, pleasant on the palate. Its distinctive element is its traditional use in cooking: it is in fact cooked in water or broth and served hot, accompanied by a velvety mashed potato purée, in a pairing that enhances the richness of the sausage.
