Squacquerone di Romagna DOP is a very fresh, soft and spreadable cheese with a sweet and slightly tangy flavor, produced exclusively in Romagna using whole cow's milk. The name derives from the Romagnol word "squacqueron," which means "watery," referring to its almost liquid consistency.
The production process involves rapid coagulation and no aging: Squacquerone is consumed within a few days of production. The paste is pure white, creamy, and without a rind, with a delicate aroma of fresh milk.
It is the quintessential cheese for piadina romagnola, the most classic and beloved pairing among Romagnol people. It also pairs beautifully with arugula, figs, honey, and jams.
