Among them stands out Mariute, the woman who has carefully prepared gnocchi for years, embodying the dedication that characterizes the event. The kitchen offers Friuli ostrich in various preparations: classic ragù, stew, steaks, and other traditional recipes that highlight the quality and distinctive flavor of this prized meat.
A distinctive element is the commitment to environmental sustainability. For years, the festival has used reusable ceramic plates and washable plastic glasses, producing only organic waste. This approach demonstrates how gastronomic traditions can coexist with ecological responsibility.
