Sagra della Crespella

The Sagra della Crespella of Santa Francesca, in the province of Frosinone, is an authentic celebration of rural traditions and genuine flavours of the Ciociaria region. Born from a spontaneous act of community sharing, when two locals decided to replicate in their village the idea of frying and freely offering food to the community, this festival has evolved over the years into a folklore event of great local significance. Every 15 March, on the feast of Saint Francesca Romana, the hamlet comes alive with the unmistakable aroma of crespelle fried in olive oil, the notes of traditional accordions, and folk songs echoing through the streets until late at night. The heart of the celebration lies in the parade of allegorical floats, crafted with dedication by residents of Santa Francesca and drawn by animals in traditional fashion. These floats, accompanied by musical competitions between folk bands and the magic of traditional instruments, represent the creativity and community spirit of the hamlet. The most anticipated moment is the awarding of the winning float, which receives the ‹Palio›: a bronze plaque depicting an Ernic shepherd-warrior, a symbol of the community's historical and cultural roots. Alongside the parade, crespelle are prepared with artisanal skill and distributed freely to visitors, transforming the piazza into a place of conviviality and sharing. The event attracts visitors from across Italy each year, hungry not only for authentic fritters but for that intangible experience made of living traditions, genuine joy, and the special atmosphere that only folk festivals can offer.
