Pane di Genzano

Pane di Genzano is a Protected Geographical Indication product originating from the homonymous municipality in Lazio, in the province of Rome. It is a bread with an elongated shape and a particularly crispy crust, obtained through natural leavening and baking strictly in a wood-fired oven, which gives the product distinctive organoleptic characteristics. It is the only bread in Lazio to benefit from IGP protection, a recognition that attests to the strong connection between the product and its territory of origin.

The production of Pane di Genzano follows traditional methods, with dough made from wheat flour, water, salt, and natural yeast. Baking in a wood-fired oven, a practice still widespread among local bakers, develops a crispy and golden crust, while the interior maintains a soft and elastic crumb. These characteristics make it particularly appreciated both for daily consumption and for accompanying dishes from Lazio's cuisine.

Pane di Genzano represents a significant example of Lazio's bread-making tradition and the valorization of artisanal production techniques. Its presence on Lazio tables testifies to the importance of quality and authenticity in local gastronomy.
