Pecorino Romano DOP is one of the oldest cheeses in the world, already described by Columella in the 1st century A.D. as part of the ration for Roman legionaries. Made from whole sheep's milk, it is a hard, cooked-curd cheese with an intense and savory flavor.
Aging lasts at least 5 months for table cheese and 8 months for grating cheese. The paste is compact, white or straw-colored, with a strong, peppery and salty taste that makes it unmistakable.
It is an essential ingredient in the great dishes of Roman cuisine: carbonara, cacio e pepe, amatriciana and gricia. Without Pecorino Romano, these dishes simply do not exist.
