Porchetta di Ariccia IGP is the king of Lazio street food: a whole deboned pig, stuffed with aromatic herbs (rosemary, garlic, wild fennel, and pepper) and slowly roasted in a wood-fired oven for 5-7 hours. This small town in the Castelli Romani hills has made it their symbol.
Preparation requires great skill: the pig is completely deboned while keeping the skin intact, generously filled with the herb mixture, and rolled into a perfect cylinder tied with twine. The slow cooking creates a crispy, golden crust while keeping the meat inside incredibly tender and fragrant.
In Ariccia, porchetta is enjoyed in a sandwich, paired with a glass of wine from the Castelli region. Every September, the Sagra della Porchetta festival draws thousands of visitors to celebrate this iconic delicacy.
