Romanella (lattuga)

Romanella is a variety of Roman lettuce with a distinctive and unmistakable character, traditionally cultivated in Lazio where it represents a safeguard of local fruit and vegetable biodiversity. Recognised as a Traditional Agri-Food Product (PAT), it stands out for its crispy and compact leaves, with an intense green colour, which maintain a fragrant consistency even after harvest.

In the kitchen, Romanella finds its most authentic use in simple Roman salad, where its natural sweetness and crispy texture shine through without any embellishment. It is, however, a fundamental ingredient in vignarola, the rustic Lazio dish that combines fresh seasonal vegetables in a flavour balance typical of local tradition. The lettuce contributes to this preparation with its ability to absorb dressings while maintaining structural integrity.

The cultivation of Romanella follows methods linked to the seasonality of the Lazio territory, where the climate and soils find in this product an authentic expression of regional fruit and vegetable quality.
