Olio Riviera Ligure
Olio Riviera Ligure DOP is an exceptionally delicate extra virgin olive oil, produced from native Ligurian olive varieties: Taggiasca in the Riviera di Ponente, and Lavagnina and Razzola in the Levante. It is among Italy's finest and most delicate oils.
Ligurian olive groves flourish on the famous narrow terraced slopes ("fascie") overlooking the sea, creating a unique UNESCO World Heritage landscape. Harvesting is almost always done by hand, given the challenging terrain.
Golden yellow in color with greenish hints, it is delicate on the palate with notes of fresh almond, artichoke, and pine nut, and is virtually free of bitterness and peppery notes. It is the ideal oil for pesto, focaccia, Ligurian fish dishes, and vegetables ripieni.
