From August 7-10, 2026, the village streets come alive with gastronomic stands serving the region's most genuine specialties. Sporbatura, a local dialect term meaning 'meat stripping', is a true delicacy: lean meat cuts from between the belly and ribs of pork. Traditional preparation involves slow cooking over charcoal, imparting a distinctive smoky flavor and unparalleled tenderness that highlights the ingredient's authentic character. Alongside sporbatura, you'll find marinated ribs, aromatic sausages, and creamy polenta — dishes embodying the essence of regional cuisine and evoking the genuine flavors of Marche's peasant traditions.
