Ciauscolo IGP is a unique spreadable salami from the Sibillini Mountains: finely ground pork meat seasoned with garlic and cooked wine, with a soft and creamy texture. It spreads on bread like a pâté.

A typical product from the Marche inland region, it holds Protected Geographical Indication status.

Preparation

    Bring the Ciauscolo to room temperature (remove from the fridge 30 minutes before serving).

    Slice the bread and lightly toast it.

    Spread the Ciauscolo on the warm bread.

    Accompany with sliced Pecorino dei Sibillini.

    Serve with a glass of Rosso Piceno.

Chef's Tips

Ciauscolo is a spreadable salami: it should not be sliced. The bread should be warm to allow the fat to melt slightly. It's also perfect on crescia.
