The beating heart of the festival is undoubtedly its gastronomy: the Locande del Buon Ristoro (Inns of Good Fare) serve iconic dishes such as truffle tagliatelle, wild boar pappardelle, and gnocchi prepared with locally-sourced ingredients, expertly paired with the region's finest wines. But the festival is far more than a culinary experience: the Competition for the Best Traditional Dish pits the inns against exceptional judges including renowned chefs, hospitality school instructors, and Slow Food experts, while the Vergare Challenge celebrates the guardians of Marche's culinary heritage.
