Casciotta d'Urbino DOP is a soft-paste cheese produced with mixed milk (70-80% sheep's milk, 20-30% cow's milk) in the province of Pesaro and Urbino. Legend has it that this was the favorite cheese of Michelangelo Buonarroti, who owned lands in the Montefeltro region.
With its distinctive cylindrical shape, thin straw-colored rind, and soft, crumbly paste, Casciotta d'Urbino offers a delicate, sweet flavor with notes of milk and herbs. The aging process is brief: a maximum of 20-30 days.
It's a perfect table cheese, wonderfully paired with fresh fava beans in spring, wildflower honey, or simply enjoyed with rustic bread and Marche olive oil.
