Mosciolo Selvatico di Portonovo is a mussel that grows wild on the rocks of Portonovo bay, at the foot of Monte Conero. Unlike farmed mussels, the wild mosciolo is smaller but boasts an intensely marine flavor and firm, orange flesh.
Harvesting takes place from May to October by the "muscolari," local fishermen who dive to detach the mussel clusters from the rocks. Production is extremely limited and the mussels are sold almost exclusively in local restaurants.
It is traditionally prepared "alla marinara" with tomato, garlic, and parsley, or baked au gratin. It is the quintessential summer dish of the Riviera del Conero.
