The Oliva Tenera Ascolana del Piceno is a table olive with Protected Designation of Origin status, cultivated in the Marche region and renowned for its generous size and particularly juicy flesh. Characterized by an intense green colour when unripe, the Ascolana olive distinguishes itself through its meaty consistency and the favourable ratio between pulp and stone, making it ideal for direct consumption and culinary processing.

In the kitchen, the Oliva Tenera Ascolana is celebrated above all as the main ingredient in olive all'ascolana, a typical Marche dish where the olive is pitted, filled with a meat stuffing, breaded and fried.
