Olive Ascolane del Piceno DOP are giant green olives with tender flesh and delicate flavor, cultivated in the province of Ascoli Piceno. The variety is Tenera Ascolana, one of the most prized table olives in the world, perfect both in brine and in the famous fried version.
Oliva Ascolana ripiena is one of Italy's most beloved street foods: the olive is pitted, stuffed with a mixture of ground meats, breaded and fried. The tradition dates back to the 1800s, when chefs from Ascoli's noble families created this signature preparation.
Cultivation in the Val Tronto benefits from an ideal microclimate. The olives are hand-harvested between September and October.
