Prosciutto di Carpegna is a cured raw ham from the Marche tradition, protected by Protected Designation of Origin status. Produced in the natural basin of Carpegna, in the province of Pesaro and Urbino, it benefits from a particular microclimate that favors slow and uniform aging. The altitude and air currents of the area are fundamental elements in the drying and refinement process of the meat.
Production follows strict regulations: selected pork legs are used, salted and left to rest in natural environments where seasonal changes determine variations in humidity and temperature. The result is a ham with dark red color, with balanced fat distribution, characterized by compact texture and easy sliceability.
On the palate it presents a sweet and delicate flavor, with slightly salty notes and a persistent aftertaste. Its structure makes it ideal to consume in thin slices as an appetizer, or to enhance pasta dishes, risottos and vegetable-based preparations. It is also appreciated when paired with cheeses and Tuscan breads in the composition of mixed platters.
