Ostie Ripiene are a unique Christmas sweet from Agnone: two ultra-thin wafers (ostie) enclosing a filling of honey, walnuts, almonds, and chocolate. Agnone, the city of bells, is also the birthplace of this ancient delicacy.
They are prepared for Christmas and given as a gift as a sign of friendship.
Preparation

Roughly chop the walnuts, almonds, and chocolate.

Warm the honey over low heat without allowing it to boil.

Add the dried fruit, cinnamon, and orange zest.

Mix well and let cool slightly.

Spread a spoonful of filling on one wafer and cover with another.

Press gently and let cool.

Chef's Tips
The honey must not boil or it will become bitter. Ostie per dolci can be found in baking supply shops. They keep well for a long time when stored in a tin.
