Taccozze e Fagioli is a rustic dish from Basso Molise: irregular diamond-shaped pieces of fresh pasta cooked in a rich bean broth with pork rind. A traditional winter staple of Molisan cuisine, hearty and full of flavor.

In the countryside of Basso Molise, this is the quintessential winter lunch dish.

Preparation

    Soak the beans for 12 hours. Cook them with the pork rind for 1 hour and 30 minutes.

    Mix the flour and water into a dough. Roll out to 2mm thickness and cut into irregular diamond shapes.

    Sauté the onion and chili pepper, then add the cherry tomatoes.

    Add the beans with their broth and the pork rind.

    Cook the taccozze in the broth for 5-6 minutes.

    Serve with raw olive oil drizzled over the top.

Chef's Tips
