Spiedo Bresciano is the convivial dish of the province of Brescia: mixed meats on skewers cooked for 4-5 hours in front of the embers, basted with melted butter and sage.
It is the star of village festivals in Franciacorta and the Brescia valleys.
Preparation

Thread the meats onto skewers, alternating with sage leaves.

Prepare the melted butter with sage.

Position the skewers in front of the embers (side heat).

Turn slowly and baste with butter every 15-20 minutes.

After 2 hours, add the potatoes cut in half.

Continue for another 2 hours, basting regularly.

Serve with polenta and cooking juices.

Very slow cooking with side heat, never direct flame. Constant basting with butter and sage is the secret.
