Baci di Dama are the most elegant cookies of Piedmont: two hazelnut paste hemispheres united by dark chocolate. Born in Tortona in 1852, the name evokes two lips kissing each other.

The Tonda Gentile hazelnut from the Langhe makes them unique in the world.

Preparation

    Blend the hazelnuts with sugar until they reach a fine flour consistency.

    Add flour and cold butter cut into small pieces. Mix quickly.

    Form small balls the size of a hazelnut.

    Bake on a tray lined with parchment paper at 170°C for 12-15 minutes.

    Let cool completely.

    Melt the chocolate in a double boiler and join the cookies in pairs.

Chef's Tips

The balls must all be the same size. The butter must be cold. Do not overbake: they should remain pale.
