Grana Padano DOP is the world's best-selling DOP cheese, produced in the Pianura Padana since 1135, when Cistercian monks from the Abbazia di Chiaravalle invented this technique to preserve excess milk.
Each wheel weighs approximately 35 kg and requires about 600 liters of milk. Aging ranges from 9 to 24 months and beyond (Riserva, over 20 months). The paste is granular and crumbly, with a straw-yellow color and a flavor that ranges from sweet to more pronounced as it ages.
It is the grating cheese par excellence of Lombardy and Padania cuisine, but it is also extraordinary in shavings, paired with balsamic vinegar, honey, and mostarde.
