Salame di Varzi is a traditional cured meat from the Oltrepò Pavese region in Lombardia, boasting DOP certification. Produced exclusively from carefully selected heavy pork meat, it represents the excellence of northern Italian charcuterie. Its main characteristic lies in its slow, natural aging process, which takes place in the Apennine valleys of the area, where the temperate climate and constant humidity create ideal conditions for the harmonious development of flavors.

When sliced, Salame di Varzi displays a homogeneous dark red color, with a compact grain and a hint of lard distributed evenly throughout. The aroma is intense and distinctive, while the taste is bold yet balanced, with slightly spiced notes and a pleasant persistence on the palate.
