Toma Piemontese DOP is the most widespread cheese in Piedmont, produced throughout the region using cow's milk. There are two types: the "Toma a latte intero" with a sweet and delicate flavor, and the "Toma semigrasso" with a more intense and aromatic taste.

Aging varies from a minimum of 60 days for the whole milk version to 90 days for the semi-fat variety. The rind is elastic and smooth, with a pale straw color; the paste is soft, with small and irregular eyes.

It is a versatile cheese, perfect as a table cheese or in the kitchen for risottos, fondues, and polenta dishes. Each Piedmont valley has its own local variant of Toma.
