Bicerin

Bicerin is the hot beverage symbol of Torino: three layers of dense chocolate, espresso coffee and milk cream, served in a small glass without mixing. Born in 1763 at Caffè Al Bicerin.

Cavour, Nietzsche and Puccini were great admirers of it. Today it is a Heritage of the city of Torino.

Preparation

    Melt the chocolate in hot milk using a double boiler.

    Prepare the espresso coffee.

  3. 3

    Whip the cream with sugar.

  4. 4

    Pour the chocolate into the bottom of the glass.

  5. 5

    Add the hot coffee by pouring it over the back of a spoon to avoid mixing.

    Top with whipped cream.

  7. 7

    Serve without mixing: the pleasure is in drinking through the three layers.

Chef's Tips

The three layers should NOT be mixed. Use transparent glass cups to appreciate the layers.
