Festa te la uliata

In the heart of Grecìa Salentina, Caprarica di Lecce is preparing to celebrate one of the most authentic symbols of Salentine peasant cuisine: the puccia with black olives, the uliata. From August 1st to 3rd, 2026, the town transforms into a stage of traditions where the aroma of freshly baked bread mingles with that of the olive tree, reviving the flavors and rituals of the farming community. It is not simply a food festival, but a true journey through time, where every dish tells stories of generations who have passed down recipes and techniques through the centuries.

During the Festa te la Uliata, the uliate are baked in wood-fired ovens at the exact moment they are ordered, guaranteeing that warmth and crunchiness that only freshly baked bread can deliver.
