The undisputed stars of the festival are Galatone's finest restaurateurs and pastry chefs, who offer visitors dishes prepared with dedication and locally-sourced, zero-kilometre ingredients. Every recipe tells a story of Salentine culinary tradition: from orecchiette with turnip greens to bombette alla salentina, from tiella to fried panzerotti, from pasticciotto with cream to cartellate. Piazza Itria transforms into a true temple of taste where you can savour local specialities in a convivial atmosphere, seated at tables set up especially for the occasion. But the Sagra del Carnevale is not just about food: the event stands out for its perfect balance between gastronomic moments and entertainment.
