
Sa Burrida alla Oristanese
Sa Burrida is a traditional marinated fish dish from Oristano: boiled dogfish (palombo) marinated in a sauce of walnuts, vinegar, and garlic. A dish of Catalan origin, it tells the story of Sardinia's judicial period.
It is served cold as an appetizer for special occasions.
Preparation

Boil the fish in salted water for 15 minutes. Drain and cut into pieces.

Blend the walnuts with garlic, vinegar, and oil to create the sauce.

If available, add the fish liver to the sauce (traditional method).

Arrange the fish pieces in a container and cover with the walnut sauce.

Marinate in the refrigerator for at least 12 hours.

Serve cold with parsley and a drizzle of olive oil.
Chef's Tips
The palombo (dogfish) is the traditional fish: its firm flesh holds up well to marinating. The walnut sauce should be thick. It improves with 24 hours of marinating.
